Ingredients:
Whole wheat flour, sugar, carrot, apple,
unsweetened coconut, walnuts, cranberries, salt, cinnamon.

Baking Instructions:
Pre-heat oven to 350. In a large mixing bowl place 3 eggs, 1 cup sunflower or
peanut oil, 1 tsp vanilla extract, and 1/2 cup water. Spray muffin tins or use
mini baking cups.
Using a small teaspoon drop batter into each tin. Bake muffins for 30-35
minutes. Let muffins cool before
trying to remove from tins. Makes 28 mini muffins.
OPTIONAL: sprinkle quick oats and turbinado sugar
over each muffin
prior to baking.
