Ginger Miso
This
is our signature salad dressing created years ago in our
restaurant out west; it was a hit and became so popular that our
customers began requesting it in retail form, so here you go!
The robust flavor of ginger
infused with toasted sesame and sweet white miso gives this dressing
an Asian flair, a wonderful alternative to traditional salad
dressings. The natural sweetness of miso "softens" the
bite of ginger yet doesn't overwhelm the elegance of this sauce. To build this dressing we use
certified organic miso from Massachusetts's very own,
South River Miso,
and ginger root from Australia.

What is Miso
and Why it's So Good for Us:
We
are honored to have South River Miso Company
only 20 miles from
our main headquarters. We use their sweet white miso in
our Ginger Miso. Miso is a soybean paste made by mixing
soybeans, salt, and grain (usually barley or rice). The sweet
white miso we use in our ginger miso dressing is certified
organic, rich in enzymes, and low in sodium (only 4%) The process of making miso involves a fermentation
period which enables the highest nutritional characteristics of
the soybean to be assimilated easily by the body. Vegetarians
who need high quality protein in their diets will find miso to
be an excellent source of protein. Miso also aids in the
digestion process because it adds beneficial enzymes similar to
those found in yogurt.

Honey
Balsamic Vinaigrette
Our Balsamic
Vinaigrette is built in four
separate stages; you are bound to
taste the time and effort we put into each step of the process
of building this unique vinaigrette. A hint of
cinnamon and wildflower honey from South Deerfield's
Warm Colors
Apiary
adds a savory characteristic to the
bold, aged red balsamic vinegar from Modena Italy. We use
red balsamic vinegar that has been aged for over 12 years
in traditional oak and chestnut barrels. From the rolling hills of the
fertile Modena area in Northern Italy, generations of
experienced farmers produce the
Trebbiano grapes that are used
to make this balsamic vinegar. The grape "must" is
concentrated and aged in various casks of different woods to yield these unique and rich flavors. Last we add
cold-pressed extra virgin olive oil from Italy made from select,
hand-picked olives harvested at their optimal ripeness.
Our Balsamic Vinaigrette is excellent on tossed salads, poached
salmon, Mediterranean pasta salads, and as a dipping oil
for crusty breads.
Some
of the Several Health Benefits of
Extra-virgin Olive Oil:
Extra-virgin
olive oil is cold pressed from ripe olives using no chemicals or
heat. It's the least processed of the different grades of oil.
As a result, it retains the highest levels of antioxidants and
polyphenolics found in olives. Antioxidants appear to protect
the body from age-related changes and certain diseases.
Polyphenolics are compounds thought to improve the immune
system. But there's no evidence that these compounds in
extra-virgin olive oil provide added health benefits. The
health benefits of olive oil
are primarily related to its high
levels of monounsaturated fats.
Although processed differently, extra-virgin, virgin and regular
olive oils are all excellent sources of monounsaturated fats.
When used in place of saturated fats, such as butter,
monounsaturated fats appear to improve cholesterol levels and
reduce the risk of heart attack. They may also play a role in
lowering the risk of some cancers.
Here are the processing methods for
different grades of olive oil:
Virgin olive oil also is cold pressed
from ripe olives but contains more acid in the final product.
The filtration process may reduce some of the antioxidants and
polyphenolics in virgin olive oil. Olive oil is a blend of
refined oil. It's chemically extracted from olives and has less
of the antioxidants and polyphenolics found in virgin olive oil.

Chipotle Ranch
This recipe was inspired by a favorite sauce from our restaurant
known as ‘Sedona Sauce.’ The buttermilk ranch suggests
“western” and the smoked jalapeño (‘chipotle’) peppers add a
southern angle, which is why this dressing/sauce has a
southwestern flair to it. We have tried every chipotle pepper
available and chose the most authentic, slow-roasted, highest
quality pepper available!
The chipotles we use are red
jalapeño peppers, picked when they are at their ripest, then
slowly mesquite smoked for weeks and preserved in a robust
‘adobo’ sauce. Adobo is simply tomato, onions and a blend
of spices. Our buttermilk ranch is made from 100% r-BGH-free
pasteurized buttermilk and a blend of bold herbs and spices. The result
is a rich, creamy,
SPICY
salad dressing which is equally excellent as a dipping sauce!
Our Chipotle Ranch is exceptional on southwestern-style salads,
grilled chicken sandwiches, burgers, veggie-burgers, or just
about anything grilled & on a baguette! Try it as a dip for
Cajun chicken strips, chilled jumbo prawns, fried clams, veggie platters,
mushroom caps, and whenever your menu calls for something beyond the
traditional onion dip.

Buttermilk:
This spicy version of ranch dressing is high in calcium and
potassium, with 0% carbs and 0% Trans Fat.
We searched all over New England for a dairy farm that doesn’t
inject their cows with r-BGH (a genetically engineered version
of the naturally produced bovine growth hormone) which some
studies are finding increasing evidence illustrating r-BGH dairy
products leading to cancers in humans. Thankfully we found
Mapleline Farm
in
North Hadley, about 20 minutes from our main headquarters.
Mapleline Farm was created back in 1904 and is still delivering glass
bottled milk to their customer's doorstep!
What's chipotle?
Chipotle peppers (pronounced
chip-oat-lay)
are simply smoked jalapeños. Jalapeño chilies have an
excellent content of potassium, Vitamin A and C. Jalapeños
are also high in iron, magnesium, thiamin, riboflavin, and
niacin. The American Society for Digestive Diseases found
that spicy foods do no harm to ulcers or the stomach. In
fact, foods with chili improve digestion in that they contain
capsaicin which can create a cortex on the stomach wall to
protect against damaging acids.

Wildflower Honey
Dijon
Our Honey Dijon dressing is
made with 100% pesticide-free wildflower honey, harvested last
summer here in Massachusetts.
This honey is light amber in
color with a wonderful floral aroma. We carefully heat the honey with an
touch of
organic red wine vinegar, let it seep for a few minutes then
stir in the finest Dijon mustard in America.
In 1948 Al Barry (Kristin's Dad) moved to Eastport, Maine and
soon befriended Ward and Carolyn Raye, the owners of
Raye's Mustard Mill.
The primary industry in Eastport in 1948 was processing sardines
and herring. Herring needed to be packed in mustard, hence the
demand for mustard mills in the area.
Raye's Mustard Mill was
designed and built in 1902 by Wes Raye, Ward's father. Today,
Raye's is the last stone mustard mill left in America and is run
by Ward's daughter, Nancy.
The wildflower honey we use in our Honey Dijon comes from
Warm Colors Apiary,
about 20 miles from our main headquarters. Tulip poplar,
blackberry, basswood, black locus, maple, wild blueberries, and
hundreds of other flowers give up a sweet taste of nectar to
each bee that goes to produce our wildflower honey.

Apiary is owned and
operated by
Dan
and Bonita Conlon who raise honeybees to produce the finest
regional honey from the fields and forests of Western
Massachusetts. Dan was the recipient of the 2004 Charles &
Evelyn Divelbiss Beekeeper of the Year Award presented by the
Eastern Apicultural Society. The minute you taste this
dressing you'll feel the decades of excellence that went into this
recipe.
Our Wildflower Honey Dijon is
sensational with baked bay scallops, Atlantic crab cakes,
grilled chicken skewers, or drizzled over a hearty organic green
salad.

Several Heath Benefits of Honey Dijon:
Raw honey (which we use)
contains bits of "propolis" created during the pollination
period. Within the propolis are well-researched
phytonutrients with cancer preventing and anti-tumor properties.
Wildflower honey is rich with vitamins, minerals and amino acids
and can be an excellent energy source for anyone in need of an
energy-boost.
The mustard in this recipe is mixed, ground between ancient
stones, and then aged to allow its flavor to mature.
Mustard seeds emerged from our food ranking system as a very
good source of selenium, a nutrient which has been shown to help
reduce the severity of asthma, decrease some of the symptoms of
rheumatoid arthritis, and help prevent cancer. Mustard
seeds also qualify as a good source of magnesium. Like
selenium, magnesium has been shown to help reduce the severity
of asthma, to lower high blood pressure, and relieve symptoms
from fatigue. Mustard seeds are also a good source of
Omega-3 fatty acids as well as a good source of calcium, zinc,
protein, niacin, and dietary fiber.

Cilantro
Lime Vinaigrette
Our Cilantro Lime
Vinaigrette is carefully built in four stages using organically
grown fresh cilantro from western Massachusetts CSA farms, old world style Dijon, extra-virgin olive
oil, and a touch of citrus to offer a contemporary addition to
your pantry.
Cilantro and lime naturally complement each other
and have been used for centuries in Latin cuisine.
Cilantro (the leaves of the coriander plant) is a close relative
to parsley and can often be confused with Italian parsley,
however the two have very distinct flavors.
We mince the
cilantro and retain its juices so as not to lose
any of the
herb's flavor. Next we combine the cilantro with organic red wine vinegar, lime, Dijon mustard, and organic agave nectar.
Agave nectar is a wonderful, natural sweetener harvested from
the agave plant, the same plant that is used when making
tequila. The next step is to heat the mixture so as to infuse
the vinegar with the sweetness of cilantro and agave, and the
sour bite of lime. Next we fill each bottle by hand and
top with extra virgin olive oil. The last step is to heat the
finished product so as to preserve it naturally.

As with our
Balsamic Vinaigrette, our Cilantro Lime Vinaigrette is very low
in sodium and cholesterol.
Lime is an excellent source of
vitamin C and cilantro is gaining recognition for its possible
removal of heavy metals such as mercury, lead, and aluminum from
the body. It's even being studied by the Heart Disease
Research Foundation in NYC as a potential treatment for cancer.
Limiting glucose consumption is a modern day concern for many
people. Agave nectar has a relatively low glycemic index due to
its higher proportion of fructose and lower level of glucose.
For those who monitor glucose intake, products with agave nectar
may prove to be more attractive than products with honey or
sugar, both of which have high glycemic indexes.

Ranch
Kid's have
been raving about our Buttermilk Ranch dressing, and parents
have been relieved once they read our label. Made with farm
fresh buttermilk, combined with dill,
parsley, onion, and plenty of garlic, our Buttermilk Ranch is
gorgeous over organic greens, ripe avocado, roma tomatoes, or as
a dipping sauce for spicy chicken skewers!
We make this dressing in very small batches to ensure absolute freshness;
it's bright white appearance tells you it was bottled just weeks
ago. We carefully designed this recipe to blend
traditional ranch flavors with an added touch of dill, making
our Buttermilk Ranch a delicious accompaniment for pulled pork
sandwiches, wild
salmon burgers, or mixed with our Salsa Veracruz and tossed with

We searched New
England for a dairy farm that makes fresh buttermilk without the
use of
recombinant bovine growth hormone (rBGH). Thankfully
we found
Mapleline Farm
in North Hadley, a family run dairy farm that still offers its
customers fresh milk delivered to their doorstep! Rich
in calcium, vitamin K, and vitamin C, our Buttermilk Ranch
dressing will satisfy your craving for something rich and creamy
without added chemicals or hidden harmful ingredients.
Originally a by-product of butter making, buttermilk is now a
milk product cultured with lactic acid. It is available in both
skim and low-fat varieties. Some buttermilk has reduced lactose
content, which can make it an option for people who have
difficulty digesting the lactose in regular milk. The buttermilk
we get from Mapleline Farm is pasteurized. Pasteurization is the
heat process used to destroy potentially harmful bacteria in
milk.

Pomegranate
Vinaigrette
For
those of you who love our Cilantro Lime Vinaigrette, here's
another contemporary addition to your vinaigrette selection!
Loaded with antioxidants, this vinaigrette presents a tart
citrus bite softened by sweet wildflower honey and fresh organic
parsley from our local CSA farms. We mince the parsley and
retain its juices so as not to lose any of the herbs flavor.
Next we combine the parsley with organic red wine vinegar,
pomegranate juice, and gourmet artisan mustard from Maine. Step
two is gently heating the honey pomegranate mixture. Step three
we fill about 400 bottles with the pomegranate mixture, then
turn right around and fill them again with extra virgin olive
oil. Once everything is capped we carefully preserve each bottle
by placing it in a boiling water bath. The result is a
fruity vinaigrette, a fun alternative to traditional sweet
berry vinaigrettes.

Applewood
Smoked Barbecue Sauce
Served
for years in our restaurant this sweet and savory barbecue sauce
adds a unique flair to a traditional recipe. Unlike mesquite and
hickory smoked barbecue sauces, applewood offers a mild, sweet
apple essence to everything it's applied to.
Wildflower honey from
our friends at Warm Colors Apiary complements the rustic bite of
naturally aged sweet apple cider vinegar from the 100 year old
Apex Orchards in Shelburne, Massachusetts.
Apply to meats,

Tamarind Lime Grille Sauce
An elegant blend of
sweet wildflower honey and sour tamarind fruit finished off with
the essence of lime. This versatile sauce was so popular in our
restaurant that we had to start selling it by the gallon to our
regular patrons!
Wonderful as a marinade
for meats & veggies or as a grille sauce for wild salmon steaks. Warm a
little of this sauce in a small saucer and serve with crispy
spring rolls, veggie tempura, or steamed pot stickers. Use a
couple of splashes in your next pot of steamed jasmine rice or
couscous. Tamarind
fruit has been gaining popularity in American cuisine for it's
unmatched flavor and versatility in all cuisines. Our tamarind
pulp is grown down south in
Florida
and is best described as the one of the main ingredients in Worcester sauce.
Closely related to the string bean this pea-like sour fruit is
dark in appearance, much like apple butter. We use
just a hint of tamarind in this tangy sauce along with fresh
organic cilantro and wildflower honey harvested locally here in Massachusetts. Rich in potassium and calcium the combination of tamarind and
lime will delight all marinating and grilling applications.

Pomegranate
Chipotle Grille Sauce
A spicy sweet & sour
grille sauce loaded with pomegranate, wildflower honey,
and
fiery chipotle peppers! Excellent as a basting sauce for baked
ham,
sensational as a grille sauce for chicken, fish, or a rack of
lamb. Pomegranates are loaded with antioxidants which is
why you see it "everywhere" now. Our favorite garnish for exotic
salads in our restaurant was a sprinkling of pomegranate seeds,
something that was readily available in southern California.
Gratefully we can still get pomegranate in juice form from farms
in southern California and Texas. The combination of the tart
juice and savory wildflower honey from our friends at
Warm Colors Apiary
here in Massachusetts is a perfect balance of sweet and sour.
Chipotle peppers are a favorite here at Appalachian Naturals so
we knocked the heat level up on this sauce for those hot-heads!

Chipotle Bleu
Cheese Dip
This recipe first evolved in our restaurant in the southwest. We
named it "Baja Salsa" and served it as a dip for blue corn
chips, then as a spread over Cajun grilled chicken sandwiches or
blacked angus burgers.
Our Chipotle Bleu Cheese Dip &
Spread combines the sharp, rugged flavor of bleu cheese, sweet
farm fresh buttermilk, and fiery smoked chipotle peppers. Please
don't expect a "chunky" blue cheese, because we avoid artificial
chemicals for preserving our dips we must heat them instead.
This creates a creamy, smooth spread rich with the flavor of
blue cheese and fiery chipotle peppers.

The applications here are endless. Savor as a dip for crudités,
chicken skewers, or toasted pita chips. If you really want to
capture your guests' attention, use as a spread for grilled
chicken sandwiches with sliced black forest ham, or as a
condiment for charbroiled angus burgers.
Vegetarians may enjoy
this as a spread for barbecued tofu wraps, crispy veggie
tempura, or smothered over grilled Portobello mushroom burgers.
One of our favorites is tossing a few spoonfuls with fresh pasta
for a creamy gorgonzola alfredo.

Our friends over at Saw Mill Site Farm in south Deerfield, MA
put out a mean line of horseradish. We've blended their rugged,
fresh horseradish with Mapleline Farm's thick, fresh buttermilk
to offer your guests a vibrant cocktail dip perfect for all your
holiday parties!
All of our products are loaded with fresh ingredients and are
naturally preserved by cooking them rather than adding chemical
preservatives. The result in this product is a savory
horseradish flavor, perfect for those who love the flavor of
horseradish but prefer avoiding the bite!

Lime Sauce
After a long awaited harvest we are pleased to
introduce our Cranberry Lime Sauce, just in time for the holiday
season. This is a contemporary version of a traditional New
England favorite. We searched all over Cape Cod and the Islands
for organic cranberry growers and found Cranberry Hill Farm.
Cranberry
Hill has provided us with
gorgeous Atlantic grown berries, rich in antioxidants and
packed with flavor! We add a touch of lime zest and all natural
demerara sugar to offer you a delicious accompaniment to your
holiday condiment selection.

1400 lbs of gorgeous Cape Cod ruby red cranberries this season.

days as restaurateurs in the southwest. Our friends Maria and Edgardo,
owners of the Veracruz cafe, shared some secrets of the Veracruz
